Roasted is a cooking term that describes a method of cooking of cooking meat or vegetables under dry heat whether in an open flame, rotisserie oven or a convection oven. Roasting is a good method for cooking food items such as:

The roasting of a food item usually causes the carmelization of the surface of the food which enhances the flavor. Caterers could choose to roast meat especially because the low temperatures preserve the moisture resulting in a more tender meat. The process of roasting usually requires the item to be basted. Basting is when the food is coating with juices such as a butter or a sauce to enhance flavor and increase the moisture.
